If you had tried to access my blog over the past two days, you might have been wondering what happened as my site was down. The answer is that my web hosting company suffered a server crash and my entire web site plus email was out of commission since Thursday night. It took them almost two full days to get to the point where I could even login so I’m slowly putting things back to normal again tonight.

Now that I have some spare time again after completing my Italy 2005 DVD*, I have been able to get some additional pictures put up on the web site. I’m always hesitant to put a lot of my pictures online because I have to compress them down to be viewed online and the picture quality is reduced as a result. You can find the new pictures here. Anyway, hope you enjoy them.
* This is only partly true. Almost as soon as I was handing out copies of the DVD to friend to view, I have been working on an updated version of the DVD. I’m constantly learning new tricks with Adobe Premier Elements (my DVD authoring software) and have already started to produce the "director’s cut".

When you’re making this recipe, you can’t help but think of this song as it’s seems so appropriate to the spirit of this dish. Originally a version of the Spanish dish paella, jambalaya is a spicy Louisiana recipe that I have made several times and has always been a favourite of ours.

The recipe that I’ve been making comes from the same recipe book called
Hot Chicken that my friend Angie gave me that has the
Spicy Caribbean Chicken Soup recipe that Barb and I love.

Between these two recipes, I can definitely say that I’ve gotten a lot of good mileage out of this recipe book. I definitely recommend adding it to your collection.
The first 3 or 4 times that I made this jambalaya recipe, it never turned out the way I wanted it to as the rice was often still hard in the middle section of the pot. I ended up rereading the details and it turned out that I was using too large of a pot and should have been using only a large skillet. Once I changed over (I actually had to go out and buy a 12″ skillet just for this recipe) everything turned out perfectly from that point forward.
The combination of all of the spices and fresh herbs gives an amazing aroma when served on the table. While it would be easier to use boneless/skinless chicken thighs, I find that the bone and skin adds an extra flavour so the minor extra inconvenience eating it is more than made up with the extra taste.
One word of caution: the recipe book that this came from is called Hot Chicken for a reason! The seasonings add a bit of a kick so if you’re not used to spicy food you may wish to tone things down a bit. Personally, I would consider this to be criminal but maybe I’m just a purist. When you’re eating a Louisiana Cajun dish like this, the kick is what’s it all about.

The Pin Ceremony has officially taken place.
Just a few steps from my computer in the den are two maps on the walls. On the one closest to me is a large map of Europe which now has 26 yellow pins on it. The yellow pins mark the major locations in Europe that we have visited since our first trip there in 1994.

It all started about 11 years ago after we came back from our first big adventure and we got a wall map of the world to start putting coloured pins on it to mark locations to where we had travelled. This worked well enough until we had travelled to Europe for the 2nd or 3rd time. After that, we decided to get a dedicated map of Europe as the pins in the Europe section of the world map were getting too close together. Since then, we have added 3-4 yellow pins a year to the Europe map alone.
Every year now when we come back from an Excellent Adventure, we get the new pins out and put them on the wall on the cities to where we have travelled – officially known as the Pin Ceremony.

Update (Nov. 18): After almost a 2 ˝ week delay of ignoring my blog to work on my Italy DVD, I hope to spend the next few days trying to clear up the backlog of articles that I had on the go before I started working on my DVD. I’m happy to say that the DVD was completed last weekend so I can hopefully get back to my normal routine now of spending vast amounts of my free time maintaining this web site.

I apologize for not posting anything new for the past week. I have no fewer than 6 articles in the works that are in various stages of completion but I suspect that none of them will get done for another week or so. All of my energy is currently being poured into the production of my Excellent Italian Adventure DVD.

When I came back from France last year I made a DVD out of the pictures from the trip. I bought a CD with a bunch of French music from the 30′s and 40′s and it became the soundtrack for that video. As I was carrying my new video camera as well as my digital camera on our recent trip to Italy, I have an abundance of material to work with.
I started working on the Italian DVD last weekend but part way through the effort (about 15 hours into it), I came to the conclusion that I needed to use more advanced video editing software and ended up starting over on it on Friday with Adobe Premier Elements 2.0. I’ve spent most of the weekend learning how to use Premier and it’s only been in the last few hours today that I’ve caught up to where I was in my previous software.
I think that I probably have about another 1-2 weeks of work left on the DVD and once this is finished I’ll post the full set of (still) pictures on the blog. I’m hoping that with next weekend being a long weekend that I’ll be able to get a lot done towards completion. I’ve pared down the 900 or so pictures that Peter and I took on the trip to a reasonable 320 which is what is going into the DVD.

After only a 10 day break after returning home from our recent Excellent Italian Adventure, Barb has brought home books from the library to start looking into travel plans for next year.

Even by our standards, this is fairly early on in the year to be hitting the books and getting down to serious travel planning. In fact my suitcase is still in the hallway outside of our bedroom waiting to be taken downstairs to the basement. I mean we’re talking about 10 more months.
Without giving away all of the details, I’ll say this: 2006 will be the most unusual Excellent Adventure year for the both of us. I also know that I will be travelling at least twice before next fall when our big vacations normally occur.
